Pad See Ew Soy Sauce Noodles
This dish literally means (stir fried soy sauce) it’s one of my favorite noodles! The soy sauce is what makes this dish. I use a sweet soy sauce that is almost like molasses and regular soy sauce for that umami balance and the bouncy rice noodles give this dish that textural delight.
Ingredients
SAUCE INGREDIENTS:
2 tbsp sweet dark soy sauce
1 tbsp regular soy sauce
1 tbsp oyster sauce
1 tsp sugar or honey or agave
pinch of pepper
NOODLE INGREDIENTS:
1 pack fresh rice noodle (one pack can make this dish 4 times, so adjust sauce accordingly)
5 minced garlic
Chinese mustard greens (gai lan)
2 large eggs
6 oz. beef of choice
Instructions
Prep sauce. Prep noodle ingredients.
To a hot skillet or wok add garlic, beef, veggie, then noodle. Add sauce. Toss quickly and serve enjoy!
Optional: if you want to add an egg into the noodle. Move the ingredients to side and scramble egg on the side so it does not clump into the noodles. Enjoy!!
