Bai Muon Chicken & Rice
This is one of those simple recipes that just feels like home. The chicken is infused with aromatic flavors of lemon, ginger and garlic making it delicious. The rice serves as a vessel of savory umami flavors that just ties it all together. I remember eating this as a child growing up and just loving it.
Ingredients
4 chicken thighs or breast
1 cucumber
BROTH INGREDIENTS:
10-12 cups water
5 kaffir lime leaves
4 garlic cloves
4 ginger slices
1 lime wedge
3 Tbsp salt
1 Tbsp chicken base
1 Tbsp sugar
GARLIC RICE:
2 ½ cup jasmine rice
4 kafir lime leaves
3 tbsp fried garlic
1 tbsp chicken base
2 ½ cup chicken broth from cooked chicken
1 tsp salt
Instructions
In a pot, add all your broth ingredients and bring to a boil. Add in your chicken and cook completely for 20 minute. Transfer your chicken to cutting board and let it cool before de-boning and slicing.
Wash your rice first then add to a rice cooker. Add in chicken broth from previous step and combine with Kafir lime leaves, chicken base and salt.
Plate with rice, chicken and sliced cucumbers, serve and Enjoy!
