Crispy Birds Nest Egg Noodles
These noodles have got to be one of my all time favorite type of noodles. The amazing textures that you get from the crispy fried egg noodles along with the savory gravy on top sets you on this culinary experience.
I love how the gravy gets the crispy noodle soft and it absorbs the sauce and you get a crispy bite from the exterior crunchy noodles along with the slightly soft and crunchy vegetables.
The sauce is a sweet, salty, umami packed golden liquid that just encompasses the noodles.
I typically have this dish during big ceremonies or weddings. It is the dish I look forward to the most. It is called Mi Xao Gian in Chinese and can be found in other South East Asian cultures as well such as Vietnamese, Cambodian, and Thai.
I made this dish with simple ingredients I had in my fridge and aimed for a quick seafood option. I used fresh vegetables such as bell peppers and gai lan to give it color and different elements in texture.
Not only is this dish beautiful, but it is extremely fun to eat. This is what I love about it. When it is served family style you can just crack right into it and you hear the CRUNCH. It is just so good! You have to give it a try and let me know what you think!
