Laarb Minced Meat Salad

Larb is often made with chicken, beef, or pork and flavored with aromatic herbs, fish sauce, toasted rice powder. It is well balanced in all flavors; salty, sour, sweet, and spicy. Larb is a salad dish that is very refreshing and light. It is perfect paired with a bowl of sticky rice and fresh vegetables.

 

Ingredients

  • 1 lb of ground minced pork (or chicken)

  • 2 tbsp of toasted rice powder 

  • ½ cup of cilantro 

  • ½ cup of mint leaves 

  • ½ cup of fresh Thai basil 

  • 4 Kaffir lime leaves 

  • 3-5 green onions 

  • 1-2 Thai chilis 

SALAD DRESSING INGREDIENTS: 

  • 1 tbps chili flakes (if you like it less spicy, add less) 

  • ½ tbsp of sugar or palm sugar

  • 1 tbsp of fish sauce (I like 3 crab brand) 

  • 1 tbsp of pradek (fermented fish sauce, substitute with a smidge more fish sauce if you don’t have it) 

  • 1½ limes 3–4 small shallots

 

Instructions

Prep your ingredients. Mince your cilantro, mint leaves, Thai basil, Kaffir lime leaves, green onions, and shallots. Thinly slice your Thai chilis and cut and juice your limes.

Make your toasted rice powder by taking 4 tablespoons of sticky jasmine rice and toasting it until golden brown. Then, in a mortar, ground it into dust. 

Boil your minced pork, cook it through, and drain the water. 

In a bowl, you are going to make your salad dressing by adding in your (chili flakes, palm sugar, fish sauce, lime juice, pradek, and shallots).

Once sauce is made, add in your minced pork and all of the other ingredients. Mix, serve and Enjoy!
