Thai Nam Tok Beef Salad
Nam tok means waterfall in Thai. This Nam Tok beef salad is a harmonious balance of taste buds. It focuses more on the beef itself but ties in the essential elements of sweet, sour, salty and spicy. The salad is dressed by using fresh lime, herbs, fish sauce, and toasted rice powder to achieve balance and delicious harmony.
Ingredients
STEAK INGREDIENTS:
1 lb steak (New York strips, sirloin, ribeye or skirt steak)
1 tbsp dark soy sauce
1 tsp black pepper
½ stalk of lemongrass
SAUCE INGREDIENTS:
1 tbsp fish sauce
1 tsp palm sugar
1½ tbsp lime juice
½ - 1 tbsp dried Thai chili flakes or regular red flakes
1 tbsp toasted sticky rice powder*
1 small shallot
1 green onion
3 tbsp cilantro
3 tbsp mint
3 tbsp Thai basil
½ tbsp lemongrass
Instructions
Prep your ingredients. Mince your lemon grass, shallot, onion, cilantro, mint and Thai basil. Cut and juice your lime. Refer to Laarb recipe for preparation of toasted sticky rice powder.
Make your marinade by combining soy sauce, pepper, and lemongrass in a bowl. Marinate your steak for 15-30 minutes.
In a hot skillet, sear off your steak to medium rare and make sure to let it rest to retain the juices.
In a bowl, you are going to add in all of your “sauce ingredients" give it a mix and toss in your steak. Enjoy it with piping hot jasmine rice.
