Soy Garlic Scallion Noodles
This is my take on a quick, easy, and flavorful Soy Garlic Scallion noodle.
I got inspiration for this dish from trying to combine flavors of your standard ramen packets but better with a mixture of sauces that will make it taste like it came from a restaurant.
The key to making this noodle super flavorful is having a nice balance between, sweet, savory, and tangy.
Noodles are definitely a must in my household and if I had to pick between rice or noodles it would be tough! But, would most likely choose noodles.
Partially because they are fun to eat and the textures are exquisite.
The type of noodles that I use are knife cut noodles. They are springy, chewy, and hold up well to the savory rich sauce.
You can find these noodles at your local Asian market or even on amazon. I like to buy a few bags of the plain noodles and stash them in my pantry because they are always a quick, easy, and delicious meal to make when you are on a budget and have little to no time to cook for yourself.
I really love using the freshest scallions and garlic for this dish because those aromatics are the star.
The hot oil will cook them instantly and allow for a fragrant aroma to fill the air. The thing that I enjoy about flash cooking the garlic and scallion in hot oil is that the garlic still retains a nice spicy bite.

My PRO TIP** is to add some protein to it such as shrimp, eggs, or even quickly blanched veggies such as bok choy or gai lan for a complete meal!
