House Special Sauce
This is my take on a house special spicy sauce.
I got inspiration for this sauce by trying numerous different versions but this combination was a winner in my book. My favorite way to eat wontons is to have it swimming in sauce.
I like this sauce because it is not too overpowering. When the sauce is made right, it should pair really well with the wontons to extenuate the flavors.
If you ever had Din Tai Fung, these wontons give it a run for its money. I think the sauce is the star in those wonton dishes.
Dumplings are one of my favorite food items to eat because they are flavorful and are very versatile in flavors.
For the sauce it is important to use a low sodium broth that is fairly mild to balance out all of the rich umami and salty flavors from the soy sauce, tartness from the vinegar, and sweetness from the added sweetener.
I really love using the freshest scallions, garlic, and ginger for this sauce because those aromatics help bring out all of the umami flavors in the wonton or dumpling..
