Mee Kola Noodles (Rice Noodles)

 

Mee Kula noodles are one of my favorite type of Khmer noodles because it is so refreshing and simple. This dish has an interesting history Cambodia’s Kula people who have origins from Burma and settled in Cambodia’s Pailin area gave heavy influence to this dish. This dish derives from the Northwest region of Cambodia.

For me personally, I really enjoy this dish because it is so light. The dressing which is the sweet fish sauce is super bright and holds together all of the ingredients well. The additional crunch from the pickled veggies gives it a nice sweet and tart balance.

My secret to this dish is to add my own garlic oil sauce which you can find here. I promise if you give this recipe a try you will in for a nice surprise and you’ll probably want to eat it once a week because it is so easy and to make and so delicious.
