Thai Inspired Corn Salsa

This Thai style corn salsa is inspired by a sauce called nam jim, in laos it can be called jaeow. It is a way for me to use my huge bottle of fish sauce with a twist. The flavors of this dish are bright and pack a punch. Although this salsa is simple, it is very flavorful.

I love pairing this with some crispy wonton chips that are freshly made. The flavors of sour, salty, and sweet are so well balanced. If you want it even spicier you can toss in some fresh Thai chilis for that extra kick.

I have been inspired by Summer and wanting to integrate south east flavors. I personally, love using fish sauce and I think this recipe is an amazing way to integrate its flavors into a sour, spicy, salty, sweet side dish that would be enticing to your hungriest crowd.
