Crispy Garlic Galangal Oil ខ្ទឹមចៀន
I grew up always having this garlic oil as a condiment for any soup or noodle dish. I remember there were days when I would wake up to the apartment filled with amazing aromatics from the sizzling garlic in oil. I would get up and run to my mom to see what she was cooking up. There is just no other delicious smell like it.
I enjoy putting this garlic oil into my kuyteav, pho, or various soups. It definitely elevates the dish and adds this amazing aroma to the dish with a slight bitterness from the fried garlic. I typically like to fry the garlic in a neutral oil or a high smoke point oil. For this recipe I used olive oil because it is what I had. But, vegetable oil works great as well.
Once you add this to your dishes, you will be wanting to make a batch and store it in your fridge because it really makes the dish even better.
