I love a good spicy salad and kimchi. This Korean inspired baby bok choy kimchi is the perfect umami bite that is equally tasty and refreshing. I love how quick and easy it is.

I love this recipe because it is simple, quick, and easy but equally tasty without the long fermentation process of kimchi. Geotjeori is basically a kimchi that's made to be eaten fresh without fermentation. The vegetables are lightly salted and pickled quickly and eaten fresh while still super crunchy.

I like this recipe because it is super refreshing and highlights the natural crunch and flavors of the bok choy with a sweet, spicy, and savory kick. I don’t add too much fermented elements in this recipe because I find that the fish sauce is enough to give you that umami flavor.
